Gumbo

The best way to have Gumbo is
probably to go to a friend’s weekend
place which they might call “The Camp” way out in the country near the
Atchafalaya Spillway Basin, accessible only by gravel road. Go
around Halloween night, or New Year's Eve when the friends are making a
huge
Gumbo and having a party followed by a bonfire. If the friends
know what they are doing, their Gumbo will look something like this:

NOTE:
I have seen some recipes on the internet for "Kosher seafood gumbo"
involving redfish. As far as I know, there is no such thing as
Kosher
seafood gumbo. Seafood gumbo contains shrimp, oysters and/or
crab. I have
NEVER seen seafood gumbo featuring only chunks of fish. It
is possible to make an excellent Kosher gumbo using chicken and/or
Kosher sausage, not chunks of
fish. |
